Alkov one last question if an RMT has a strikethrough on previous sets but have been replaced with a new move or something along those lines, can we choose to use the old set?

Nope, only use the updated ones so if they struck out the old set then it can't be used. However if it's slashed [ / ] then you can choose between what moves to use.
