Justification/Niche: Okay, I already know what you're thinking, 97 Atk with Huge Power and Choice Band shouldn't be allowed. You have a point, but the thing is, look at this thing's coverage, it gets Knock Off, Bug Bite and Return, that's all... So it doesn't have the coverage of Bulk, for example, that can destroy checks with Superpower, Zen Headbutt and Stone Edge. Speaking of Bulu, Carvine is only slightly stronger:

Justification/Niche: A Defensive Pivot that with only two weaknesses in Bug and Poison, which are very uncommon offensive typings. It can alternatively opt for Regenerator for recovery when switching out or the extremely niche Natural Cure to avoid Toxic Stall. It has great bulk and offensive presence, as well as Discharge to punish faster threats allowing it to deal with Tapu Koko, Manectric, Ash-Greninja and Magnezone. Though, being weak to U-turn is never a great thing, and the choice between Regenerator and Thick Fat is very tough to make, the former making it weak to Fire and Ice and the latter allowing it to be more easily PP Stalled and weakened throughout a match.

Justification/Niche: Gourgeist is now a very versatile Pokémon; Small-Sized can be a fearsome wallbreaker with LO Sheer Force or a Scarfer capable of outspending almost anything else; Super-Sized on the other hand is a Tank and is very tough to take down, great defensive typing and tremendous bulk enables it to wall BoltBeam users like Magearna, Medicham, Manectric and non Z-Move Kyurem-B, as well as stop Fire-types like Volcarona, Charizard-Y and Heatran. Unfortunately, it is Rocks weak, and can be a momentum drain in certain occasions.
